Beef Shin
Shins roll in flour on both sides and fry in oil in a pan to form a crust. Put the meat in a baking dish, adding Bay leaf, juniper berries, broken dried mushrooms, black peas, whole garlic cloves, large pieces of onions and cranberries. Add the berry sauce to the meat.   Cover with parchment, and then foil, tightly pressing the edges to the shape, so that the meat is well baked. Put in the oven, preheated to 180 degrees for 1 hour 40 minutes.
